In my opinion the first-person shooter genre gained its fame with Doom. Although Doom was not the FIRST FPS (Wolverstien 3D was i believe) it was by far the one that got people interested. The along came Quake, which was the first FPS to include 3D player and enemy models!

Duke Nukem 3D by 3D Realms was another variation of Doom and Wolf3D and it was great fun as well!

Then, in my opinion this is still the best FPS there is, came along GoldenEye for N64 made by Rareware. It introduced many new concepts like sniping, spacific enemy hit zones (head shots, etc.) and the multi-player was just mindblowing for its time.

After this cornerstone is gaming history FPSers started to become really big. Much of this popularity was gained from the violence and blood in the games. Then along came Unreal by ID with its incredible graphics and huge levels.

Then there was Half-Life a game that made a story come to life. Riveting action ang great gameplay that many games could benefit from.

Today FPS are by far the most action-filled and violent games ever, games like Serious Sam which packs ongoing fights and Theif (which i forgot to mention) uses stealthy qualitiies insted of the constant run and gun!
